Eugenia caryophyllata is a 10–15 m tall evergreen tree of the Myrtaceae family that grows wild in the Moluccas, Antilles, Madagascar and Indonesia. It was introduced to the island of Réunion by Pierre Poivre and from there, it was transferred to other colonies to be cultivated. The flower buds are collected and dried and make up the spice called cloves. Despite the name, they have nothing to do with the carnation plant: the juxtaposition of the two simply derives from the carnation-like shape that the buds take on when dried.
A single clove is therefore formed by the long gamosepalo calyx formed by 4 sepals and 4 petals still closed that form the central round part

The essential oil is obtained from plants with the method of steam distillation and a dark yellow liquid with a characteristic fragrance is obtained.
