Annual herbaceous plant, sometimes perennial, which can reach one and a half meters in height with leaves divided into deep laciniae and yellow flowers that come together to form umbrella-like inflorescences. Bitter fennel is similar but differs from dill or bastard fennel, whose leaves have a distinctly unpleasant taste, due to the apical leaves with shorter petioles than the lamina and to the typically winged fruits.
The essential oil is obtained from the plant by steam distillation and a yellow liquid is obtained with a rather intense fragrance similar to that of anise.
