Thyme is a perennial plant that normally reaches 35-40 centimeters in height, with an erect and very branched stem; the leaves are small, oval and rather elongated, with entire margins, opposite two by two and white or pink-lilac, with a whole corolla that opens in two lips. It grows spontaneously in the regions of the Mediterranean area, prefers arid and rocky soils and can survive even long periods of drought but not cold temperatures. In ancient Greece, Thyme still covered with dew was collected and combined with Mint and Rosemary to compose a bunch to hang at home so that the gods would give health and happiness.
The essential oil is extracted from the fresh flowered tops by steam distillation the product obtained from a first distillation is a very powerful red oil, but the white essential oil that is used and that is on the market has undergone a subsequent distillation which makes it less irritating. This oil obtained from a second distillation is White Thyme oil.
