Gum Arabica is a set of polysaccharides with small amounts of proteins (approx. 2%) and traces of sodium, magnesium, calcium and potassium salts. It is used as a thickener, emulsifier, gelling agent, stabilizer.
Whitish, odorless, tasteless powder. Typical grain size 200 microns contains:
